Every big religious Greek holiday is preceded by a fasting period, a practice that has its roots in the early Christian times. The one which is honored by the majority of the Greeks is the Sarakosti fasting (Lent) about forty days before Easter. Popular Cretan dishes throughout Lent are dolmadakia "yialantzi", which means “fake” because the grape leaves are wrapped around herb-flavored rice and not meat; black-eyed peas, beans or lentils baked or as salads; pies with wild greens; pickles of all sorts; dips made with eggplant & fava (split yellow pea puree). Delicious!
